Baked Artichoke and Feta Dip Recipe

Artichokes are one of my favorite vegetables. I eat them on my pizza, in sandwiches, steamed, grilled, you name it. I have even been known to eat artichoke hearts straight out of the oil (we’re talking good quality ones in olive oil…).

This dip is big on the artichoke flavor which is exactly how I like it. I hope you do too!

INGREDIENTS

  • 1 garlic clove, peeled
  • 6 1/2 ounces jarred artichoke hearts, drained
  • 8 ounces cream cheese
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup chopped fresh flat leaf parsley
  • 3 1/2 ounces feta, crumbled
  • 1/3 cup almond slices

INSTRUCTIONS

Preheat the oven to 350˚F.

In a food processor, blitz together the garlic and artichokes. Add the cream cheese, pepper, parsley and feta. Pulse the processor until the mixture is combined, but not totally smooth. I like it a little chunky. Transfer to an oven-proof baking dish and bake for 15 minutes. Top with the almond slices and return to the oven to bake for another 5 minutes, or until the almonds are colored.

Enjoy while warm with crackers or pita wedges for dipping.
