I first discovered baked feta on a girls’ trip to Greece – warm feta slathered in olive oil and fresh oregano. Yum! I didn’t think it was possible to like feta more than I already did…but it is. Try this recipe and find out for yourself!

This version of baked feta is simple, using dried oregano instead of fresh. I have also added cherry tomatoes for their sweetness and great color.

INGREDIENTS

  • 1- 7 ounce (200g) block good quality feta cheese
  • 8-10 cherry tomatoes, quartered
  • 1 teaspoon dried oregano
  • a pinch of salt and pepper
  • 1 tablespoon good quality olive oil

INSTRUCTIONS

Preheat oven to 400˚F.

Place your block of feta in an oven-proof dish.

In a small bowl, mix together the tomatoes, oregano, salt, pepper and olive oil. Spoon over the feta. Bake in the oven for 10 minutes, uncovered.

Serve immediately with crackers or crostini.
