Basque Salad Recipe

This is a simple salad using some of the best of what Basque country has to offer – ham and cheese!

INGREDIENTS

For the salad:
  • 3 ounces thinly sliced Basque ham, such as Bayonne ham
  • 4 ounces arugula, washed and dried
  • dozen cherry tomatoes, halved
  • 2 ounces basque hard cheese (e.g., ossau-iraty), cubed or sliced
For the dressing:
  • 3 tablespoons olive oil
  • 1 tablespoon sherry vinegar
  • pinch piment d'espelette (or cayenne)
  • salt and pepper

INSTRUCTIONS

Whisk together the dressing ingredients, adding salt and pepper to your taste.

Place the arugula and halved tomatoes in a large bowl. Toss with the dressing. Transfer to your serving plate(s) and top with the ham and cheese. Enjoy!

COOK'S TIPS

Don’t buy a bottle of sherry vinegar just for this recipe! Cider or red wine vinegar work well too.
