Cinnamon Loaf Recipe

This recipe is best described as a big cinnamon bun. I have simplified the usual cinnamon bun recipe to use pizza dough (store bought or home made) so you skip the time consuming part of allowing the yeast to rise. This quick version is still big on flavor (just not time spent in the kitchen!)

INGREDIENTS

for the loaf:
  • pizza dough
  • 1/4 cup butter plus 2 tablespoons, melted
  • 1/4 cup light brown sugar
  • 1 tablespoon ground cinnamon
for the glaze:
  • 1cup icing sugar
  • 2 tablespoons water

INSTRUCTIONS

Preheat your oven to 400˚F. Line a baking tray with silicone or parchment paper.

Roll out your pizza dough into a large rectangle (landscape orientation). Brush with 1/4 cup of melted butter.

Mix together the brown sugar and cinnamon. Sprinkle all over the butter. Roll up the long side of the pizza dough until you have a long log. Using a sharp knife, start one inch from the top of the log and cut the log into two long strips, leaving the strips connected at the top of the log. Intertwine the strips so you end up with something that looks like a rope. Roll up the rope into a circle and this is your loaf. Transfer to your baking tray and brush with 2 tablespoons melted butter.

Bake in the oven for 20-25 minutes, or until the loaf is golden on the top and bottom and when tapped on the bottom, the loaf sounds hollow. Remove from the oven and transfer to a wire rack to cool slightly.

In a small bowl, mix the icing sugar with two tablespoons of water. Stir until you have a smooth glaze.  Add a touch more water if your glaze is not a drizzling consistency. Pour over top of the loaf and enjoy!
