Creamy Pasta with Sausage and Spinach Recipe

This creamy pasta dish is great for a midweek meal. I use sausages, but you could also use cut-up hot dogs if you think it would get your kids to eat the spinach. It’s a trade-off, but that’s parenting, isn’t it? For another fun way to work some green into your diet, try this spinach and yogurt flatbread.


  • 13 ounces fusilli pasta
  • 1 tablespoon olive oil
  • ½ pound sausages, cut into ½-inch slices
  • 1 large garlic clove, minced
  • 2 cups heavy cream
  • 1 cup grated parmesan cheese
  • ½ teaspoon ground white pepper
  • Large handful baby spinach


In a large pot of salted, boiling water, cook the pasta according to the package instructions.

While the pasta cooks, heat the olive oil in a large, shallow saucepan over medium-high heat. Add the sausage and cook, stirring occasionally, until golden brown on all sides, approximately 5 – 7 minutes. Add the minced garlic and cook for an additional 30 seconds, stirring to ensure the garlic does not burn. Add the cream and lower the heat to a gentle simmer. Simmer until reduced slightly, about 4 minutes. Stir in the parmesan cheese and pepper. Add the cooked pasta directly from the cooking water to the sauce. Stir in the spinach and cook over low heat until the spinach has started to wilt, about 2 – 3 minutes. If you find the sauce is too thick, stir in a touch of the pasta water to loosen it up.

Serve immediately, family-style.
