These sweet potato fries are so yummy your kids will eat them. Sweet potatoes make great fries because they crisp up on the outside but go beautifully soft on the inside. I think that’s what the kids like…oh, and they are sweet! Pair them with my buttermilk chicken strips to make your kids extra happy.

INGREDIENTS

  • 4 sweet potatoes
  • 3 tablespoons olive oil
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon ground cumin
  • 1 tablespoon kosher salt
  • 1/4 cup finely grated parmesan cheese

INSTRUCTIONS

Preheat the oven to 400˚F. Line two baking trays with parchment paper.

Peel the potatoes and cut into 1/2-inch wide by 4-inch long batons. Toss in a large bowl with the oil, pepper, cumin, salt and parmesan cheese. Transfer to the lined baking trays and bake in the oven for 25 to 30 minutes, flipping the fries once halfway through cooking. Once the fries are cooked through and nicely colored on the outside, remove from the oven and enjoy while warm.
