These are delicious, even if they are not the most healthy way to eat green beans! The beer adds some nice flavor and the cornmeal ensures a good crunch. A fun way to use up extra beans and also helps get the kids eating them!

INGREDIENTS

For the batter:
  • 1 cup beer
  • ½ cup all-purpose flour
  • ½ cup cornmeal
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Canola oil, for frying
  • ½ pound green beans, cleaned and ends trimmed
  • Fleur de sel, to garnish

INSTRUCTIONS

In a large bowl, mix together the batter ingredients and let rest for at least 5 minutes.

Fill a large dutch oven with a few inches of oil, and attach a candy thermometer to the side. Heat the oil over medium heat to 375°F. Working in small batches, use tongs to add the green beans to the batter and toss to coat. Remove from the batter, shaking off any excess and lower the green beans carefully into the preheated oil. Fry, turning once, until golden. Remove and transfer to a paper towel-lined baking sheet. Sprinkle with fleur de sel while still warm. Repeat with the remaining batches of beans and serve immediately.
