Gilda Lollipops Recipe

These traditional Basque “lollipops” are full of flavor…strong flavors! The guindilla peppers used in this recipe are a local Basque pickled pepper that are often served on the side with slices of Basque ham and eaten whole. If you cannot find this kind of pepper, any pickled pepper will do.

Special equipment: 15 long toothpicks


  • 15 guindilla peppers, or other variety of pickled pepper
  • 15 anchovies, drained
  • 15 pitted green olives


On each toothpick, skewer one pepper, one anchovy, and one olive. Arrange the assembled toothpicks on a platter to serve.
