These goat cheese and walnut toasts are super simple and quite common here in France. I love them on their own as an hors d’oeuvre but they also work well served on top of a green salad for a first course or a light lunch.

INGREDIENTS

  • baguette
  • 7 ounce goat cheese log
  • handful walnuts, roughly chopped
  • good quality olive oil

INSTRUCTIONS

Preheat your oven 400˚F. Line a baking tray with parchment paper.

Cut 8 half-inch slices from the baguette and arrange in one layer on the baking tray. Place a slice of goat cheese on top. Sprinkle each goat cheese round with chopped walnuts and drizzle lightly with olive oil. Bake in the oven for 10 minutes, or until the bread and walnuts have colored nicely and the goat cheese has softened.

Enjoy while warm.

COOK'S TIPS

Want to add a bit of sweetness? A drizzle of honey is a delicious addition after baking but before serving.
