Mom’s Christmas Breakfast Casserole Recipe

I have been eating this breakfast casserole every Christmas morning for as long as I can remember – probably since I was able to eat solid food! This tradition has continued in my own home. Living in France means improvising with some of the ingredients (read: no dry mustard but better cheese). I guess it all balances out in the end!

This casserole is so rich that once you are finished eating it, you understand why you wait another year to eat it again…

INGREDIENTS

  • 1 pound breakfast sausages
  • 6 slices bread
  • 1/2 pound cheddar cheese
  • 1/4 cup melted butter
  • 3 eggs
  • 2 cups milk
  • 1/2 teaspoon dry mustard
  • 1 teaspoon salt
  • 4 large tomatoes, sliced

INSTRUCTIONS

In a large skillet over high heat, brown the sausages. Once nicely colored on all sides, transfer to a paper towel lined plate to remove any excess grease.

Cut the bread, cheese and sausages into bite size pieces. Layer half of the bread, cheese and sausages into your casserole dish. Repeat with the remaining bread, cheese and sausages. Pour the melted butter on top.

In a medium bowl, whisk together the eggs, milk, mustard and salt. Pour over the casserole, cover and refrigerate overnight.

Bring the casserole to room temperature and then bake in a 300˚F oven for 1 hour covered.

Enjoy while still warm with some sliced tomatoes on the side.
