Parsley and Mint Potato Recipe

New potatoes are one of my favorite things about the spring. These herby new potatoes are simple to make and very delicious. Also divine served with a dollop of crème fraiche or sour cream.


  • 1 1/2 pounds new potatoes
  • 6 tablespoons unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup finely chopped fresh mint
  • 1/4 cup finely chopped fresh flat leaf parsley


Boil the new potatoes in a large pot of salted water until cooked through. Drain and set aside.

In a large skillet over medium-high heat, melt the butter. Add the potatoes along with the salt and pepper. Once the potatoes are warmed through, add the chopped herbs and toss to coat each potato. Adjust the seasoning to your taste. Transfer to your serving dish and enjoy while warm.
