Cheesy Spinach Naan Pizza Recipe

Naan bread is a great alternative to pizza dough. Best part is that you can usually buy some great ready made naan bread at supermarkets these days. I went with an Indian theme for these pizzas but the usual tomato sauce and mozzarella works well too.

INGREDIENTS

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon salt
  • 1/2 teaspoon turmeric
  • 2 tablespoons tomato paste
  • 5 ounces baby spinach, washed and dried
  • 1 cup grated sharp cheddar cheese
  • 2 naan breads

INSTRUCTIONS

Preheat oven to 350˚F. Line a baking tray with foil.

Heat the olive oil in a frying pan set over medium-high heat. Fry the onion and garlic until starting to color and fragrant, about 3-5 minutes. Add the cumin, coriander, salt and turmeric. Stir to coat the onion and garlic in the spices and fry for another 2 minutes over medium heat. Stir in the tomato paste and finally add the spinach. The heat will wilt the spinach as you stir it into the onion mixture. Once the spinach has just wilted and is incorporated, remove the pan from the heat. Divide the mixture between the two naan breads and top each with the cheese. Bake in the oven until the cheese has melted and the naan is warmed through, about 7-10 minutes. Enjoy while hot!

COOK'S TIPS

Slices of chickens would be a great topping extra too.
