Virgin Strawberry Lemonade Recipe

When strawberries are in season, I just can’t get enough of them. This lemonade was born out of an overabundance of strawberries sitting in my kitchen one day. Now I tend to overbuy just so I have a few extra for this drink!

INGREDIENTS

  • 10 strawberries, hulled and halved, plus more for garnish
  • 5 cups water
  • 1/4 cup sugar, plus more if desired
  • 1/2 cup lemon juice (approximately 3 lemons), plus more if desired
  • 3 mint sprigs, to garnish

INSTRUCTIONS

Combine the strawberries, water and sugar in a medium saucepan. Heat the mixture just until the liquid starts to simmer. Leave it on a gentle simmer for 30 minutes and then remove from the heat. Pour the mixture through a sieve, and using the back of a spoon, gently squeeze the juices from the strawberries. Stir in the lemon juice. Allow the mixture to cool for 15 minutes. Taste and add more sugar and lemon juice as you like.  How much sugar you need to add will depend on the sweetness of your strawberries.

Serve in a pitcher with ice, some quartered strawberries and a few sprigs of fresh mint as garnish. So refreshing on a warm summer day.
