Sweet Potato with Arugula and Feta Recipe

I like sweet potato but I do find that the taste can become a bit cloying without some other flavours. This side dish is very simple but tasty and a nice substitute for the usual baked potato. I haven’t put any measurements as this recipe is not really about being exact but more about adding more or less of what you like.

INGREDIENTS

  • 2 sweet potatoes
  • Greek yoghurt, for garnish
  • Good quality crumbled feta, for garnish
  • Handful fresh arugula, for garnish
  • Chopped pecans, for garnish
  • Ground black pepper, to taste

INSTRUCTIONS

Preheat the oven to 350°F.

Wash and dry the sweet potatoes. Wrap each potato in aluminum foil and roast in the oven until easily pierced with a knife, about 45  minutes – 1 hour. (The timing will depend on how large your potatoes are). Remove from the oven and allow to cool for a couple of minutes in the foil.

Remove the potatoes from the foil and halve the potatoes lengthwise. Top each half with the yoghurt, feta, arugula, chopped pecans and black pepper. Serve while still very warm.
