Limoncello Granita Recipe

I really enjoy a small glass of limoncello after a big meal. Perhaps a sign that I have been living in Europe for too long. This “adult” dessert is incredibly refreshing as it is cold and very lemony. Perfect for after a rich meal such as seafood.

INGREDIENTS

  • ½ cup sugar
  • 2 cups water
  • ½ cup limoncello
  • ¼ cup fresh lemon juice (approximately 2 lemons)
  • Mint sprigs, for garnish

INSTRUCTIONS

Combine the sugar and water in a small pot. Bring to a slow boil over medium heat, and reduce to a simmer. Simmer, uncovered, for about 5 minutes. Remove from the heat and allow to cool for about 10 minutes. Stir in the limoncello and lemon juice and pour into an 8 x 8-inch freezer-safe dish. Transfer to the freezer and mix with a fork every 30 minutes until all the liquid has frozen, about 2 hours total.
Serve in small tumblers with sprigs of mint to garnish.
