Lay the puff pastry sheet on the prepared baking sheet and prick a few times with a fork.
If you have long green beans, cut them in half. Halve your zucchini lengthwise and cut each half into thin slices. Set your vegetables aside.
In a bowl, beat together the eggs, milk or cream and half the cheese. Season with salt and pepper. Spread this mixture all over the puff pastry leaving a half-inch border along each edge. Lay the beans and zucchini in any pattern you would like over the egg mixture. Sprinkle with the remaining cheese. Bake in the oven for approximately 20 minutes or until the puff pastry is golden and when lifted you can see the bottom is cooked.
