Green Bean and Zucchini Tart Recipe

 This is the perfect tart recipe in the heart of summer when you have an abundance of green beans and zucchini.


  • 1 rectangular sheet store bought puff pastry 
  • 2 eggs
  • ½ cup whole milk or cream
  • 1 cup finely grated parmesan (can use almost any hard cheese)
  • Salt and pepper to taste
  • 2 dozen green beans, washed and trimmed
  • 1 small zucchini


Preheat the oven to 350°F. Line a baking sheet with parchment paper.

Lay the puff pastry sheet on the prepared baking sheet and prick a few times with a fork.

If you have long green beans, cut them in half. Halve your zucchini lengthwise and cut each half into thin slices. Set your vegetables aside.

In a bowl, beat together the eggs, milk or cream and half the cheese. Season with salt and pepper. Spread this mixture all over the puff pastry leaving a half-inch border along each edge. Lay the beans and zucchini in any pattern you would like over the egg mixture. Sprinkle with the remaining cheese. Bake in the oven for approximately 20 minutes or until the puff pastry is golden and when lifted you can see the bottom is cooked.
