Chocolate, Almond and Date Ball Recipe

These little balls are a delicious sweet treat – perfect for after a meal or as a mid-afternoon pick-me-up.

INGREDIENTS

for the balls:
  • 1 cup whole skinned almonds
  • 8 dates, preferably medjool, pitted
  • 1/2 teaspoon salt
  • 3 oz., about 10, dry butter cookies (such as LU brand)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup almond milk
for the topping
  • 7 oz. good quality dark chocolate
  • 1/4 cup almond flour or finely chopped almonds

INSTRUCTIONS

In a food processor, blend together all the ingredients for the balls. Shape into 1 1/2 inch balls and place on a baking tray. Chill in the fridge for at least one hour.

After the balls have chilled, roughly chop and melt the dark chocolate (in a bowl placed over a pot of simmering water or in the microwave.) Dip each ball in the chocolate and then place on a wire rack. Sprinkle some almond powder on top of each and return to the fridge to set. Allow the balls to chill for another hour and then enjoy. Best kept in the fridge.
