Fig and Elderflower Cocktail Recipe

I wouldn’t normally concoct a cocktail with figs, but given the overabundance we have of them this season, I just can’t help myself. I am trying to think of creative ways to eat up all the fruit we have without jamming it. This cocktail is a delicious combination of figs and elderflower topped off with a little fizz from some sparkling wine. Yum.

INGREDIENTS

  • 2 fresh figs, 1 halved and 1 quartered for garnish
  • 1 ounce elderflower liquor (such as St. Germain)
  • 2 ounces vodka
  • Sparkling wine (such as Prosecco)
  • Fresh sprig of thyme, for garnish

INSTRUCTIONS

Muddle the halved fig and elderflower liquor together in a cocktail shaker. Add the vodka and lots of ice. With the lid securely on, shake vigorously for at least 20 seconds. Strain through a fine mesh sieve into a low ball glass. Add a few cubes of ice and top with some sparkling wine.

Garnish with a few pieces of the quartered fig and a sprig of thyme. Enjoy immediately.

COOK'S TIPS

Figs can vary in size. If the figs you are using are big, then only use one fig. Muddle half of it for the cocktail and garnish with the other half (cut in two).
