In a cocktail shaker filled with ice, combine all the ingredients except two sprigs of mint. With the lid securely fitted, shake vigorously for at least 20 seconds. Strain the liquid into two lowball glasses filled with ice. Serve with a sprig of mint in each cocktail.
For a mocktail version, fill a lowball glass with ice. Fill halfway with pineapple juice. Add apple juice until the glass is 3/4 full. Finish with a splash of sparkling water if desired. Garnish with a sprig of mint and an apple wedge.
