Couscous with Raisins and Chickpeas Recipe

I find couscous is a great alternative when you are getting tired of pasta or rice. This recipe doesn’t have many ingredients but it still has a lot of flavor.


  • 2 cups couscous
  • 1 (15 ounce) can cooked chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • ¼ teaspoon cinnamon
  • ½ teaspoon salt
  • 1 tablespoon chopped fresh parsley
  • ¼ cup raisins


Cook the couscous according to package directions. Once cooked, add all the other ingredients while the couscous is still warm. Serve immediately.
