Nutty Granola Recipe

Making granola at home is a great way to use up any open bags of nuts or dried fruits, plus you get to control how much sugar there is. I like a hearty granola so in my recipe I use three different kinds of nuts. This is great eaten on its own or sprinkled over some greek yogurt and topped with some fresh berries that are in season.

 

INGREDIENTS

  • ¼ cup honey
  • ¼ cup vegetable oil
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1½ cups rolled oats
  • ½ cup macadamia nuts, halved
  • ½ cup sliced almonds
  • ½ cup unsweetened coconut flakes
  • ½ cup pecans, roughly chopped
  • ½ cup dried cranberries (optional)

INSTRUCTIONS

Preheat your oven to 300°F.

In a large bowl combine the honey, oil, cinnamon and salt. Mix in all the other ingredients except the cranberries. Stir well to make sure all the oats and nuts are coated in the honey mixture. Spread onto a rimmed cookie sheet and bake in the oven for 25-30 minutes. Stir the granola a couple of times during cooking to make sure it bakes evenly. Remove the granola when it has a nice golden colour.

Allow the granola to cool and become crispy on the cookie sheet, Once cooled, stir in the dried cranberries.

Keep granola in an airtight container.
