Homemade Nutty Granola Recipe

I like a hearty granola so this recipe does the job for me. Of course, the nice thing about granola is that you can add or subtract according to your own taste. Feel free to switch it up and add any nuts you have on hand or other favourite dried fruits.

INGREDIENTS

  • ¼ cup honey
  • ¼ cup vegetable oil
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 ½ cups rolled oats
  • ½ cup macadamia nuts, halved
  • ½ cup pecans, roughly chopped
  • ½ cup flaked almonds
  • ½ cup unsweetened coconut flakes
  • ½ cup dried cranberries (optional)

INSTRUCTIONS

Preheat the oven to 300°F.

 

In a large bowl, mix together the honey, oil, cinnamon and salt until well combined. Add the oats, nuts, and coconut flakes and stir well to make sure everything is coated in the honey mixture. Spread on a rimmed cookie sheet and bake in the oven until golden, about 25-30 minutes, stirring the granola a couple of times during cooking to make sure it bakes evenly.

 

Remove from the oven and allow the granola to cool on the cookie sheet. (It will become crispy as it cools). Once cooled, stir in the dried cranberries if desired. Store in an airtight container.

 

The granola is great on its own or added to some Greek yoghurt for a yummy breakfast treat.
