Yogurt Cake Recipe

This is a very simple and traditional French cake. It does not require many ingredients nor much equipment. A simple bowl and spoon and you are ready to go. Not surprisingly, this is said to be the first cake French children learn to bake.

INGREDIENTS

For the cake:
  • ¼ cup vegetable oil, plus more for greasing the cake tin
  • 1 ½ cups all-purpose flour, plus more for dusting the cake tin
  • ½ cup full-fat Greek yogurt
  • 2 large eggs
  • 1 cup sugar
  • 1 ½ teaspoons baking powder
For the yogurt glaze:
  • 2 tablespoons Greek yogurt
  • 1 cup icing sugar
  • 1 ½ teaspoon water

INSTRUCTIONS

Preheat the oven to 350˚F. Grease an 8-inch round cake tin with vegetable oil and lightly dust with flour.

In a large bowl, mix together the yogurt, oil and eggs with a wooden spoon until well combined. Add the sugar, flour and baking powder and mix again until evenly incorporated.

Pour the batter into the prepared tin and use a spatula to smooth the top. Bake for 25 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and transfer to a wire rack. Allow the cake to cool in the tin for 5 minutes, then remove from the tin and place back on the wire rack to cool completely.

While your cake is cooling, stir together all the ingredients for the glaze until smooth. Once completely cooled, transfer the cake to a serving platter. Pour the glaze down the middle and allow it to run all over the top and edges of your cake (you can use a spoon to gently guide the glaze to the sides of the cake). Allow the cake to sit, uncovered, for the glaze to harden and cut into slices to serve.

COOK'S TIPS

This is intended to be a very simple cake. If you would like more flavor, you could add some lemon zest to the glaze topping.
