Who doesn’t love a good crab dip? This cold crab dip is packed with flavor thanks to the fresh tarragon and horseradish. A great dip that tastes even better the day after.

INGREDIENTS

  • 1 5-ounce tin crab meat
  • 8 ounces cream cheese, softened
  • 2 tablespoons strong prepared horseradish
  • juice of 1/2 lemon
  • 1 spring onion, white and green parts, finely chopped
  • 1 tablespoon finely chopped fresh tarragon
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground white pepper

INSTRUCTIONS

Drain the crab meat very well (removing as much liquid as possible) and place in a medium size bowl. Add the cream cheese, horseradish and lemon juice and mix until evenly combined. Stir in the onion, tarragon, salt and pepper. Taste and adjust the seasoning as you like. Place in a serving bowl and cover with plastic wrap. Chill in the fridge until ready to serve. Also tastes great the day after it is made and the flavors have had time to combine.
